100 Happy Days!

A few days ago, my daughter told me about the #100happydays Challenge.  I haven't heard about it anywhere else, or from anyone else -- so maybe it's just a YOUTH thing that I've plopped myself down in the middle of. But I'm okay with that -- because it's making me think about being happy every day.  Granted, we may not be "happy" all the time, but there are a million happy moments that show up during each day, and this is teaching me to look for them, recognize them, welcome them, and celebrate them.

You can FOLLOW ALONG WITH ME for 100 days.

UPDATE :: Well, I'll just be honest. This project was a fail. I missed a BUNCH of days of posting on Facebook, and I thought I would catch up, but I just don't see that happening. That said, please know that I have NOT stopped being HAPPY.   I'm just too busy living it to post it. Also, I probably chose the wrong platform... I should have used my blog rather than FB. If you'd like to keep up with some happy thoughts HERE AT THE BLOG, you're welcome to follow along!

Recipe: Chicken Fajitas (Crock Pot Friendly)

I'm nothing if not a trailblazer... said nobody... ever... about me.  I'm more of an "ahaaaa!" moment kind of girl -- and usually long after everyone else has done their ahaaaas!  I thought I'd share this particular "ahaaaa!" moment with you.

I have a recipe that our family has used for chicken fajitas forEVER.  The kids (especially) love it.  In fact, if they ask what we're having for supper and I say "chicken," they always ask, "Chicken Fajitas?"  It kind of makes me nuts because, really people?  Can we eat something besides Chicken Fajitas?

But some days, I confess, it sounds good to me too, and I WISH that I had thought to marinate the chicken earlier so that we could have fajitas for dinner.  Typically I grill the chicken [either outside, or on the George Foreman grill] and cut it in strips for the fajitas.  Depending on where the grilling fits into my day, that may mean re-heating the chicken when it's time to eat.  But wouldn't it be IDEAL if I could just pop the chicken in the crock pot and let it simmer away in the marinade all day?  Then, I could just shred it, and....  Wait!

What did I just say?  Of course: IN THE CROCK POT!! Why didn't I think of that before??


So, I challenged myself to make our favorite Chicken Fajita recipe in a new way... in the crock pot.  My plan was to use our favorite marinade recipe which only has TWO ingredients in addition to the chicken:
  • 1/3 cup soy sauce
  • 1/4 cup lime juice

How easy is that?  Obviously, this isn't a traditional, spicy, Mexican-style kind of fajita.  Typically, we serve green pepper slices (fresh or steamed a little in the microwave), shredded cheese, salsa, and [of course] soft tortillas with these.  When my mom serves them, she often has sour cream.

Anyway, here's what I did.  I used the amount of frozen chicken breasts that would be appropriate for our family.  I trimmed off some visible fat, and put the chicken in the crock pot.  I poured the marinade over the top, and set it on low.  Initially, the marinade did not cover the chicken.  Not even close.  But, during the day, I opened the crock pot, and move the chicken around.  This helped the chicken to cook evenly, but it also allowed each piece of meat to be in the marinade.  Eventually, the chicken cooked down, and the juices got added to the marinade, creating more liquid.  When I felt the chicken was cooked, I took it out and shredded it.  I skimmed the remaining marinade for any fat, and then added the shredded chicken back into the marinade.  [Please note that it's only okay to do this since the marinade was also COOKED!]

Now, we'll see what kind of reviews this gets from the family.

The verdict is in:

  • My son and daughter loved it.  My son mentioned how much more the flavors of the marinade permeated the meat when cooked this way.
  • My husband still prefers his chicken grilled & sliced.
  • And, as for me?  I really enjoyed it.  1).I agree with my son's comments, however, the meat definitely seemed more salty when cooked this way.  Next time, I might add some water to the marinade to dilute it a bit.  2).I really like the meat shredded rather than sliced.  3). It was the first time when I ever felt like I had my act together for a Chicken Fajita dinner!  That's huge to me.

So Proud ~ Sophomore Edition

Last year, there was THIS.

This year, I think she thought it was too much to hope for -- though I reminded her again and again that classes were going even better this year.  Still, she didn't want to assume -- or get her hopes up, I think.

But then the letter came:

"Your presence is requested at the Academic Awards Ceremony..."


"I told you so!" were the first words out of my mouth.

"Well, I didn't want to ASSUME!!!" were the words out of hers.

I guess I'd rather she didn't assume than that she feels she is "due" anything.  But here is this year's reality:

Merit roll :: 1st, 2nd, and 3rd quarters
[She had set a goal to be on Merit or Honor Roll for 3 out of 4 quarters, and I believe she will attain Merit Roll for the fourth quarter as well -- but that is not calculated until some time after the awards ceremony when grades are turned in, and etc.]
Recognition of Academic Achievement in U.S. Studies II, and Biology
Recognition of Outstanding Effort in Spanish II

I'm really proud of our girl!  She was stubbornly determined to make this year better than last year.  You should hear the plans she has for next year!  Look out world!

Being More Intentional About Eating Outdoors This Summer (It doesn't have to be PeRFECT!)

I can't tell you how many times I thought... if we only had a picnic table or a nice table and chairs on our patio. But, at the end of the day, there just wasn't much money in the budget for fancying up the patio.  Of course, my mind always went first to all of the NEW patio furniture that we could not afford.  Nothing like having a defeatist attitude, right?  But my hubby?  He has a nose that KNOWS -- and he can sniff out the bargains!

Like this:
We were at Tractor Supply a little over a year-and-a-half ago, and found THESE 2 CHAIRS.  They were a good deal, and definitely an upgrade from the type of patio furniture we'd had before.  Maybe we were onto something.  We were encouraged about watching for more bargains.


Almost a year later, we were in Amish Country, and spied THESE 4 CHAIRS AND A MATCHING UMBRELLA STAND for cheap at a thrift store.


The seat-straps were a mess, but with a little elbow grease, they cleaned up nicely!


Weeks later, I found the chair pads on sale at Target!!  So close in color -- what a find!


At Christmas-time last year we were... at a home-center kind of store (maybe Lowe's?  I forget.) -- and we saw PATIO UMBRELLA'S ON CLEARANCE.  Hello?  Did I mention that just a few months ago we had obtained an umbrella stand?

So far NO TABLE.

Well, the other day, my husband was outside grilling for our dinner, and he said, "We should eat outside!"  Oy. You know what that means...  dig up a table.  Several years ago, my hubby's parents had given us a folding table.  We've used it for various things in and out of the house -- but never as a permanent addition to the patio. That's the table that we set up for dinner.

I grabbed a tablecloth, and we set up the table with our six chairs around it -- and you know what?  It looked kind of nice!!

"It doesn't have to be perfect to be beautiful!"

Our dinnerware and glassware don't match the current tablecloth, which doesn't match the umbrella.  But, it's a start.  Everything doesn't have to match and/or be coordinated before we can sit down to a meal!  All of those limitations... were IN MY HEAD.  My family never ever said, "I don't like this table." -OR- "What's up with this tablecloth?"  Guess what?  They just ate, and talked, and laughed... and stayed (on THREE different nights so far!)

There's something about sitting in the shade of our own home while the sun is still shining brightly behind the house... and sharing a meal, and hearing the birds sing, and watching the trees sway in the breeze.  It's a slice of awesome.


Since that first night, we have kept the table on the patio, with the chairs around it.  It's kind of like a permanent "come eat here" invitation!  The tablecloth, some tablecloth weights, and the chair pads are just inside the patio door, and since everything is close at hand, we've eaten out there at least two more times, as weather has allowed.  [In fact, it's so welcoming, that I find myself out there during the day reading, or taking time to check out the grocery ads.  You know, things I would normally do inside!]

Ultimately, I'd like to find some kind of over-sized basket or tote that I could keep all of the patio things in.  It's nice to have everything together and close at hand, so we can be ready at a moment's notice.

Also... tonight, we learned that we need would like a tray to deliver all of the dishes and food in fewer trips!  All of that will come eventually.  We might even look at the second-hand stores FIRST.  We're on a roll!
